Mole verde with pork is a typical dish in Mexican cuisine. We share our recipe with PROAN products so you can taste this delicious recipe.

These are the ingredients:

– 3 lts of water- 500 grams of PROAN pork pulp- 1000 grams of PROAN pork rib- 1000 grams of PROAN pork knuckle- 4 garlic gloves- 1/2 of onion- 1/4 bunches of fresh cilantro- 3 cups of pumpkin seeds- 1/4 cups shortening – divided- 4 tomatoes – cut in half
– 4 serrano peppers – veins and seeds removed- 1/4 cups of poblano pepper – chopped, veins and seeds removed- 1 tablespoon of oregano- 1 tablespoon of cumin- 1 tablespoon of whole pepper- 1/4 cups radish leaves- 1/2 cups of lettuce leaf- 1/2 cups of epazote- 1/2 cups of holy leaf, or acuyo leaf- 1 tablespoon of sea salt

Preparation:

  1. Heat water in a pot over high heat, cook the pulp and pork rib with garlic, onion and cilantro until the meat is soft. Reserve the broth and meat.
  2. Heat a comal over medium heat and toast the seed until it releases its aroma, remove from the comal and cool. In a food processor, process to a powder.
  3. Heat a pot over medium heat, fry the onion and garlic with a little shortening, add the tomato, the peppers, cook until golden brown and each ingredient releases its aroma. Add the spices one at a time, allowing enough cooking time between each one.
  4. Fill with the meat cooking broth that you reserved and cook until it boils. Remove, cool a little and blend together with the radish leaves, the lettuce, the cilantro, the epazote, the holy leaf and salt to taste until a smooth mixture.
  5. Heat a little more shortening in a pot and fry the previous preparation, add the powdered seed and the rest of the broth until it reaches a boil. Add the pork, cook for 30 minutes adding the remaining broth little by little as requested by the sauce, stir constantly and cook until the fat is released. Rectify the seasoning.
  6. Serve and accompany with rice and toasted seeds.
