Roast pork strip is one of the most emblematic cuts to grill and it’s extremely delicious! Perfect for bringing friends & family close or just for cooking at home with your couple.

In PROAN Carne de Cerdo we made a very Mexican version of this delicious dish, a roast of pork strip with TEQUILA. Interesting right?

Here are the ingredients for this dish:

Ingredients (for 6-8 strips)

 

– 2 tablespoon smoked salt- 4 tablespoons garlic poder – 4 tablespoons onion poder- 2 tablespoon ground allspice – 20 bell peppers, roasted and ground
– 4 tablespoons cayenne pepper- 2 tablespoon cumin- 2 tablespoon oregano- 10 garlic cloves in brunoise

 

For the strip roast (for each)

 

– 3 tablespoons mustard- 6-8 pieces of Asado de Tiras PROAN Carne de Cerdo®- 1 cup brown sugar
– 100 g Gloria® butter- 100 ml cup of Tequila- 100 g cup of BBQ sauce

Acompañamientos

– Tuscan salad- French fries

 

Preparación

 

  1. Preheat the grill to 180 ° C
  2. For the rub, mix the salt with the garlic and onion powder, the allspice, the bell peppers, the cayenne pepper, the cumin, the oregano and the chopped garlic in a bowl.
  3. Place the strips in a baking dish, spread with the mustard and then cover both sides with the rub, bake for 1 hour and remove from the oven (this first cooking can be in the same insert).
  4. On a board, place aluminum foil and in the center arrange the Gloria® butter in 10 g squares, the brown sugar, and the BBQ sauce (in that order).
  5. Place the strip roast on top of this mixture, form the aluminum into a box, add the tequila and wrap with the aluminum foil also covering the top (each of the pieces is wrapped separately or a maximum of 2 pieces together).
  6. Bake for 2 more hours, remove from the oven, let it rest for a minute and cut, serve and enjoy with the accompaniments of your choice.
