Ham

Also known as leg, it’s the hind leg of the pig. Very versatile in cuisine and the favorite part of pork lovers.

Head

Belly

Meat that comes from the pork belly, usually contains less meat and more fat from the subcutaneous portion of the pig's skin.

Jowl

is the layer of fat, skin and meat located on the neck of the pig, under its face. It is even more tender and juicy than pork belly.

Shoulder/Picnic

It comes from the area near the loin. The shoulder is a fairly marbled cut.

Loin

In french entrecôte, “between ribs”, is a cut of meat from the tissue along the dorsal side of the rib cage of the pig. If the entrecôte is deboned, we obtain the sirloin, which is characterized by the low percentage of fat in that cut. Very close to the entrecôte near the pork backbone and under the ribs, is the fillet, lean and juicy. It usually has a cylindrical shape.

Hock

Located between the junction of the two bones of the leg where the elbow is formed.

Pork Butt

It is the part of the pork loin that is closest to the head. It is a much fatter and juicier piece of meat than the rest of the pork loin and it’s ideal to cook whole, either in the oven or in a quick cooker.
